Peel potatoes and cook in saucepan with water until tender; drain. Mash; stir in butter, salt, pepper, nutmeg and parsley. Spoon about two-thirds of potato mixture on sides and bottom of greased 1½ to 2-quart baking dish; set aside. In medium bowl combine cheese, ham and onion; spoon this mixture into the potato-lined dish. Beat together eggs and milk; pour over ham/cheese. Spoon (or pipe with pastry tube) remaining potato mixture over top. Sprinkle with paprika. Bake at 400° for 30-35 minutes or until puffed and golden brown. Let stand 10 minutes; cut into serving portions.
