Hawaiian Macadamia Chip Cookies

Ingredients

  • 3/4 cup granulated sugar
  • 1/2 cup Darigold Butter
  • 1 egg, beaten
  • 1-1/4 cups flour
  • 2 tablespoons chopped, shredded coconut
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup coarsely chopped macadamia nuts
  • 6 ounces coarsely chopped white chocolate*
  • 1/2 teaspoon almond extract

Instructions

Thoroughly blend sugar and butter; mix in egg. Combine flour, coconut, baking soda and salt; stir to blend. Add to creamed butter mixture and mix well. Gently mix in nuts, white chocolate and almond extract. Drop rounded teaspoonfuls of dough onto greased cookie sheet. Bake at 375°F, 10 to 12 minutes or until slightly browned. Makes about 4 dozen cookies.

*White chocolate chips may be substituted.
